For October I created a bright orange smoothie bowl using a seasonal coquina squash & then topped it with a small handful of blueberries, blackberries & banana. I added a tablespoon of hemp seed hearts to add a slight nuttiness.
Sure to cheer you up if the weather’s a wee bit chilly or on a rainy day! It’s quite filling with the protein from the hemp seeds and the banana. Just the ticket.
Coquina Squash Smoothie Bowl with Autumn Berries and Hemp Seeds
Gluten Free, Dairy Free, Refined Sugar Free, Vegan, Raw Food
1 cup autumn coquina squash
1 ½ large bananas
½ cup mango (I used frozen)
½ cup almond milk
Small handful of blueberries
Small handful of blackberries (again, I used frozen here)
1 tbsp hemp seeds
You Will Need
Place the large banana into the blender together with the squash, mango & almond milk.
Blend until smooth and pour into a small bowl.
Top with the remaining banana, sliced & then add the blackberries, blueberries & hemp seeds.
Now you can sit, relax & enjoy your Autumn Squash Smoothie Bowl!
You can easily use frozen fruit now that it’s available in most supermarkets. I love to buy both mixed & single fruits in bags from the frozen section.
