Refreshing cucumber salad with sprouts & shoots
This is a refreshingly light & crunchy raw cucumber radish salad drizzled with a creamy vegan dill dressing. It's served topped with pumpkin seeds, spring onion, mustard & broccoli shoots.
This salad goes really well with something plain & comforting for dinner like a gentle red lentil dhal & sprouted brown jasmine rice.
Cucumber, Radish Dill Salad with Mustard & Broccoli Shoots
Gluten Free, Dairy Free, Refined Sugar Free, Vegan, Raw food
1 whole cucumber
1 tbsp pumpkin seeds
1 spring onion
a large pinch of mustard sprouts and broccoli shoots
Creamy Vegan Salad Dressing
1 tbsp plain vegan yogurt
juice 1/2 small lemon
2 tsp maple syrup
1 tbsp water
few sprigs fresh dill
good quality salt & pepper to season
You Will Need
small bowl for dressing
plate for serving
Slice the cucumber & radishes thinly & arrange on a plate. Finely slice the spring onion.
To make the creamy salad dressing mix the vegan yogurt with the lemon juice, water & maple syrup with a fork. Finely chop the dill & stir through the dressing. Season with salt & pepper to taste.
Drizzle the dressing over your salad & sprinkle with pumpkin seeds and finely sliced spring onion. Top with a large pinch of mustard sprouts & broccoli shoots.
