Cucumber, Radish & Dill Salad with Mustard & Broccoli Shoots

Refreshing cucumber salad with sprouts & shoots

This is a refreshingly light & crunchy raw cucumber radish salad drizzled with a creamy vegan dill dressing. It's served topped with pumpkin seeds, spring onion, mustard & broccoli shoots. 

This  salad goes really well with something plain & comforting for dinner like a gentle red lentil dhal & sprouted brown jasmine rice.

Recipe Ingredients

  • 1 whole cucumber

  • 4-5 radishes

  • 1 tbsp pumpkin seeds

  • 1 spring onion

  • a large pinch of mustard sprouts and broccoli shoots

Creamy Vegan Salad Dressing

  • 1 tbsp plain vegan yogurt

  • juice 1/2 small lemon

  • 2 tsp maple syrup

  • 1 tbsp water

  • few sprigs fresh dill

  • good quality salt & pepper to season

 

You Will Need

  • sharp knife

  • chopping board

  • fork

  • small bowl for dressing

  • plate for serving

 

Recipe Instructions

  1. Slice the cucumber & radishes thinly & arrange on a plate. Finely slice the spring onion.

  2. To make the creamy salad dressing mix the vegan yogurt with the lemon juice, water & maple syrup with a fork. Finely chop the dill & stir through the dressing. Season with salt & pepper to taste.

  3. Drizzle the dressing over your salad & sprinkle with pumpkin seeds and finely sliced spring onion. Top with a large pinch of mustard sprouts & broccoli shoots.
