Summer Burritos Recipe
Try this raw food burritos recipe for an amazing nourishing lunch packed with the freshest ingredients.
These are so quick and easy to make. You can change the recipe by swapping the ingredients depending on the season and what you fancy on the day.

Raw Vegan Burritos

Makes Approx 3 Burritos
½ red pepper
3 spring onions
½ ripe avocado peeled
2-3 tbsp hummus
Pinch salt; Himalayan or Cornish sea salt are both good
3 Large leaves from whole leafy greens such as Swiss chard, cabbage, kale or spring greens
Fresh microgreens or sprouts (I love sunflower greens and pea shoots)
Fresh herbs - I love coriander, basil, dill (use what you have)
You will need
1 chopping board
1 sharp knife
Slice the fruit and vegetables into thin strips roughly the same size, keeping the lime and the large leafy greens aside.
Lay them out neatly so that they’ll be easy to reach in a moment.
Take a large green leaf and lay this out flat onto your work surface. If the stalk is particularly tough then do cut this bit off.
Using the hummus now, carefully spread ½ to 1 tablespoon of this over the middle of the leaf evenly. You’ll want to avoid the edges and try not to tear the leaf or it will all squidge out when you roll it up.
Lay a few sticks of fruit and vegetable onto the hummus horizontally along the main vein of the leaf. This will make it easier to roll it up.
Top your leaf with a few microgreens/sprouts and fresh herbs.
Add a squeeze of lime and a pinch of good quality salt.
Now to roll it up.
Fold the sides of the leaf inwards slightly together with the stalk, if you kept it in.
Picking up the leaf from the side nearest to you roll it all towards the middle. Continue to roll it up turning it over at the top so that you end up with a beautiful bright green roll!
Repeat - you should have enough ingredients to make 3 burritos in total.
